Chocolate Chip Cookies

This is Jaime's recipe! It makes a ton of cookies, so you may need to half it! Enjoy.

Best Chocolate Chip Cookies Ever

2 cups butter, softened
4 eggs
1 1/2 cups sugar
2 cups brown sugar
1 1/2 t. vanilla
1/2 t almond extract
5 1/2 cups flour
2 t. salt
2 t. baking soda
small package French Vanilla instant pudding (straight from the box)
2 pkg chocolate chips

Basic cookie directions... cream butter & sugars. Add eggs & extracts. Mix dry ingredients together. Slowly pour dry into wet. Stir in chips. Bake in oven 350 for 12-15 minutes.

Best *DARN* Turkey EVER!

Tomorrow night we are having some friends for dinner. Wade just graduated from medical school and is now a full-blown doctor, heading to Washington for Residency. Here's what we are serving the new DR (& his awesome wife who still puts up with him, even after 10+ years of school)!!

Turkey Brine - if you haven't brined a turkey, you are missing out. It is so easy, and gives you the most moist turkey ever!

12-14 pound turkey, thawed
2 1/2 CUPS salt (I know that's a lot, but trust me!)
5 cups water
2 cans chicken broth
1/2 cup brown sugar
1/4 cup lemon juice
2 tsp. cayenne
1/4 cup TPC Rosemary Herb seasoning (or equal parts parsley, sage, rosemary & thyme... like the song!)
1/4 cup TPC Crushed Peppercorn & Garlic Rub (or whole peppercorns and chopped garlic cloves)
2 tsp onion powder

Put all ingredients, except the turkey, into large stockpot on the stove bring to a boil, stirring occassionally. Remove from heat, let cool completely. (The whole point in boiling is to dissolve the salt & sugar.) Rinse 12-14 pound thawed turkey, pat dry. Place turkey in a new, garbage bag. Poor cooled solution over turkey, careful not to spill! Put in the stock pot, tie side up, and store in your fridge. (If you don't have a stockpot big enough, we use a 5 gallon drink container & it works too, put about 3 cups ice cubes in with it to help keep the turkey cold while soaking.) Soak overnight. Remove turkey from bag 3 1/2 hours - 4 hours BEFORE cooking. Rinse turkey WELL. Place breast-side down in roastng pan. Bake on 325 for 3 1/2 hours. The seasonings get inside the meat and each piece tastes like you personally rubbed it! So GOOD!

Garlic Mashed Potatoes

6-8 large potatoes (can use red potatoes too) peeled & diced
3 tsp salt, divided
4 cloves garlic, minced
2 tsp fresh ground pepper
1/2 cup sour cream
1/4 cup butter

Boil potatoes, garlic & 1 tsp salt until tender. Drain. Mash with masher, fork or pastry blender until somewhat creamy. Add remaining ingredients. Mix with hand mixer until smooth. Serve!

Turkey Sloppy Joe's

I'm liking ground turkey breast!

1 lb ground turkey breast
2 cans tomato sauce
1 tbs. chili powder
1 tbs. season all
1/4 cup chopped onion
2 garlic cloves, pressed or chopped
2 tsp worchestershire sauce
hamburger buns or chips

Brown turkey breast with onions, garlic, seasonall & chili. Drain. Put back into pan, add tomato sause & worchestershire sauce. Serve on buns, or it's divine over chips (corn or tortilla!)

Limeade - People lost their jobs to bring you this!

I sat for hours at a very popular restaurant to get this for you all. Some poor bartender lost his job because of it! My measurements aren't exact because he wouldn't tell me anything, and he actually started to hide the ingredients! So paranoid ;)

Brazilian Limeade

3 limes (washed, DON'T SQUEEZE THEM)
1/2 cup sweetened condensed milk
1/2 cup sugar
3 cups water

Cut limes into quarters. Put in blender, along with all other ingredients. Blend well. Strain into cup of ice. Serve chilled! Also good... add strawberries into the blender!

Mini Turkey Meatloaf

This recipe is for all those Skywest employees who read this!

Mini-Turkey Meatloaf
1 lb. ground turkey breast
1 cup oatmeal
2 eggs
1 tsp. coriander
1 tbs. rosemary seasoning (or equal parts rosemary, sage, thyme, parsley)
1 tbs. season salt
1 tsp. black pepper
1 tsp. cayenne
8 oz. tomato sauce

Preheat oven to 375. Put all ingredients in mixing bowl. Mix until well blended. Spray muffin pan (ground turkey breast doesn't have enough fat in it. Your food will stick if you don't spray well). Bake for 20-25 minutes or until inside temperature is 165. Serve with baked potatoes. We loved this one!!

Taco Casserole, AKA Enchilada Pie

This one is for Sherrie!

1 can refried beans
1 large can enchilada sauce ( or you can make your own, needs 4 cups-ish)
1 lb. ground beef
6 tortillas ( I use flour, you can use corn too)
2 cups cheese
1 can olives
green onions
sour cream
fresh limes (2)
Brown ground beef, season with chili powder, garlic, season-all & black pepper. Drain.
Cut 3 tortillas in half. Layer bottom of casserole dish with tortillas, top with half the beans, half the meat, then 1 cup sauce. Repeat once more. Top with remaining sauce, cheese & olives. Serve with green onions as garnish, sour cream and lime wedges!
