Amber, I love that you have this blog! I also want to do something similar, but haven't gotten around to doing it. Good job!
Ok, there are these mint brownies that i tried at a bake sale last year. They were DIVINE! I have an AMAZING brownie Recipe, but it's the two top layers that I can't get figured out. it was a layer of mint and a layer or chocolate frosting on top. I tried finding a recipe on line and the mint was too runny. Anyway, if you know what I'm talking about and you have a recipe, I'd love to try it!
